The drought conditions of the past year, along the West Coast (Darling) resulted in drastically reduced crop with smaller bunches and berries size. The small crop and high than normal January temperature prompt us to pick the grapes early than normal. The resulted wine, although light and fresher than 2015, is supper concentrated and flavorsome.
Picked in the early morning at 22 balling, the grapes were whole bunch pressed, after which the juice was allowed to settle for 48 hours before being racked off into stainless steel tanks and cold fermented. The fermentation was stopped early leaving the wine naturally sweet.
